Foodie Friday: Egg White Salad

Happy Friday, loves!  Happy Happy Friday – that precedes a long weekend!  Anyone up to anything fun!?

 

I shared with you last week a yummy egg white salad that I creatied – inspired by the Egg White Salad with Chives that I purchased from Trader Joes.

I’ve never made Egg Salad using anything but the whole egg – and mayonaise.

 

Well..  I’ve also never liked egg salad before because I don’t like the yolks of eggs.

 

Let me tell you – I am IN LOVE with egg Salad now!!

 

Egg White Salad

 

Makes 2 Servings

Ingredients

  • 4 Egg Whites (hardboiled, cooled.. shelled.. you know.. just the white part)

 

  • 1/4 Cup Frozen Peas (slightly defrosted in microwave)
  • 1 tbsp chopped green onion
  • 1 tbsp Sherry Wine Vinegar (I bet apple cider vinegar would be GREAT.. just don’t have any)
  • 1 tbsp dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp honey (just to soften the tang a tiny bit.. but if tang is what you want.. then omit this)

Preperation

  • Slice the egg whites into 1/4 in pieces

  • Add frozen peas and green onions
  • Add mustard, sherry wine vinegar, lemon juice
  • Decide if you want to sweeten… if so add honey.
  • Mix together – and let sit in refrigerator for at least a half hour .. allowing flavors to disperse

 

I enjoyed this in an open faced sandwich .. and also mixed in the a salad. It is a great summer meal – that is very friendly to a light diet and healthy life style!!

I loovveee that stuff from traders but yours looks totally yummy I am going to have to make this! I’m with ya on the yolk I am not a fan nor do I care for mayo it totally grosses me out!

I like pasta salads. I haven’t had any in a long time, but I would enjoy one given it was in front of me lol. Before I got all health technical with cooking/baking, I used to make a really good potato salad. I did use some lower fat substitutes, but I could never make it now since I really try to avoid mayo at all costs!

I avoid mayo too. Something about it just grosses me out! Greek yogurt can be an awesome substitution!

My fave non-veggie salad is egg salad with mustard or chicken salad with celery, grapes and apples. Nom nom nom.

What did you do with the egg yolks? Just wondering :)

I throw them out! I know its wasteful :(
When I am at my parents house.. sometimes someone will eat them. (Which makes me gag.. a hard boiled yolk.. yuck!)

That sounds great! I love a good pasta salad, or potato salad. I don’t make it with mayo, though (hate it). I bake the potatoes and used nonfat sour cream.

YUM!! my favorite non-veggie salads have to be egg and tuna. but i just saw a recipe where i believe PB Fingers swapped out tuna and put in shrimp…i can’t wait to try it and i think THAT would be my top pick! :)

I like egg salad, but I haven’t had it in forever. I dont’ have any aversions to eggs so I’m good w/ regular egg salad- but the egg white salad does look good. Boiling & peeling eggs is a lot of work just for the egg whites though.
